Fun for all the family. These melted snowman cookies are perfect for the Christmas season!
You will need:
- 80g unsalted butter, softened
- 115g caster sugar
- 1 egg
- 1 tsp vanilla extract
- 200g plain flour
- 1/2 tsp baking powder
- pinch of salt
For the icing:
- 150g icing sugar
- icing pens
- small sweets for decoration
Let’s get started!
First start by preheating the oven to 108 degrees and line two trays with baking paper.
Next cream the butter and sugar together with an electric mixer until pale and fluffy. Add the egg and beat well. Fold in the vanilla extract, flour, baking powder and salt. Mix until a dough is formed.
Shape the dough into s ball, then wrap in cling film and let rest in the fridge for about 30 minutes.
Once you have let the dough chill for about 30 minutes it’s time to roll out the dough out and cut into circles using a cookie cutter or the base of a glass tumbler. Transfer these to a baking tray and bake for 10 minutes or until golden.
Leave the cookies to cool.
To make the white icing add a tiny bit of water to the icing sugar and stir well, you can add more water until you reach the desired consistency. Your icing should be fairly thick.
It’s now time to decorate the marshmallows with eyes, noses, mouths etc. You can use your icing pens to do this, or you can use the white icing as glue to stick sweets onto the marshmallows.
To decorate the cookies, spoon on a little white icing and spread over the surface of your cookie, then press the marshmallow down in the middle and decorate adding arms using your icing pens.
